The whole traditional distilling process at Filliers, from mashing, to fermenting and distilling jenever demands the skills of five generations of master distillers to obtain the most exquisite jenevers.

Mashing and fermenting grains to obtain the semi-finished product

Raw materials: Malt, wheat, maize and above all rye give Filliers spirits the character that is acknowledged by connoisseurs around the world. We select the very best varieties from the very best suppliers and grind them in our milling unit.

Mashing: The finely ground grains are macerated together with the barley malt and the chemical reaction turns the whole into maltose sugar. The addition of yeast transforms the maltose sugar into alcohol and carbon dioxide.

Fermentation: During fermentation a whole range of semi-finished products emerge. Depending on their composition they add a pleasant or less pleasant flavour to the final distillate.

Distillation: an art that is borne of passion

The basic principal of distillation is based on the difference in the boiling point between alcohol and water. Making a refined distillate is a true craft to which our master distiller has to apply all his knowledge, experience and passion.

Alcohol is separated out for the first time from the solid mass by mashing until condensation forms in the distillation column. The raw alcohol is purified in a second distillation process in a still. The art is to separate the ‘head’ (first alcohol) and the end (final alcohol) from the ‘heart’ (the good alcohol).

Filliers carries out strict quality inspections of all raw materials, the distilling process and the ageing of the juniper distillates in oak barrels.

Distilling jenever is a very delicate balancing act in which the role of experienced master distillers is of essential importance if a high-quality end result is to be achieved.

Malt wine: unique – because we make it in-house

Filliers is one of the few distilleries of jenever that continues to distil its own malt wine. We do this in traditional copper stills. Malt wine is a semi-finished product that is made exclusively from the best grains; it also forms the basic ingredient for all jenevers.

Filliers also supplies its malt wine to other well-known national and international brands. We then finish our malt wine to create an assortment of blends or end-products. As you can see, there is such a concept as typical authentic Filliers quality.

The Filliers distillation process is a carefully guarded family secret that has been passed down through four generations from our very first generation of master distillers.
