With its innovative roasting facilities Castle Malting® produces a broad range of specialty malts with exceptional taste and aroma properties. The advantages of our caramelized and roasted malts are:

  • even more flavour
  • higher caramelization rate
  • less bitterness and less astringency in darker colourations. 

Caramel malts impart a mild caramel-sweet aroma as well as adding golden colour to beer.  A distinguishing characteristic of all caramel malts is glassiness. This glassy endosperm creates the desirable non-fermentable components that give to a true caramel malt the ability to contribute to body, mouthfeel, head retention, and extended beer stability. For these purposes it is mainly recommended Château Cara Clair® or Château Cara Blond®. The best seller among beer experts is our Belgian caramelized malt Château Special B® that is used to produce a deep red to dark brown-black colour and fuller body. Château Special Belgium® gives raisin-like flavors while imparting a rich malty taste and a hint of nut and plum flavor as well. One of our highly roasted specialty malts, Château Café, imparts a nutty and easy to discern coffee flavour and aroma to beers. It brings in a "coffee" note in Stouts and Porters. This malt adds also a smooth mouthfeel and complexity to any dark ale. Whereas Château Chocolat contributes to a deep brown colour. This is where its name comes from. Château Chocolat malt is used to adjust the colour of beer and imparts a bitter chocolate, nutty and toasted flavour.
